Summer got me like: Avocado Bruschetta

Summer has got me craving all things light and refreshing. Nothing like an evening on the back deck with a bottle of wine and a light snack to really soak up the amazing weather. And then I had my first avocado toast (there is a new wave of this going around so beware) and BAM im now an addict.
This recipe for Avocado Bruschetta is a favorite at our house!
Avocado Bruschetta!
Refreshing, light and perfect for a party!
what you will need:

French loaf sliced and toasted (we love Costco roasted garlic loaved for extra flavor)
1 large Avocado
3-4 roma plum tomatos
1/2 small purple onion
1 tbspn olive oil
garlic powder
salt/pepper to taste

fresh mozzarella


slice and toast your bread- if doing this for a large group it is easiest to place in oven on 350 for 5-10 minutes until lightly browned

smash avocado in bowl and add in chopped onion, garlic powder, olive oil, salt and pepper- set aside

slice tomatoes! I like to remove the inners of the tomatoes and use just the outside to avoid the soggy-ness of the inside getting onto the bread- allows for the toasts to sit out longer!

smash fresh mozzarella in your hands and pull apart

spread avocado mixture onto toast, layer with fresh tomatoes and mozzarella and sprinkle with olive oil, salt pepper and serve! delicious and simple!

you can also put a little bit of balsamic glaze on top for extra flavor!
